Typical of Apulia, broad beans are soft legumes with a sweet flavor and highly respectable nutritional properties: compared to a caloric value one third lower than that of cereals, they have a high content of proteins, carbohydrates, vitamins, mineral salts and fibers. Their cultivation, very old in the Mediterranean area, follows methods handed down for generations.
The sowing, which begins in November in the sandy soils included in the Natural Reserve of Torre Guaceto at just 15 meters above sea level and a few hundred meters from the sea, involves the use of broad beans from the previous year carefully chosen by the farmer.
They are left to dry directly on the plant and harvested in the first half of June to be manually shelled, according to tradition, by the skilled hands of the grandmothers.
Broad beans are used for many local recipes such as "Mashed broad beans with chicory" or in soups.

In the warmer months it is recommended to keep in the refrigerator. Natural broad beans, not treated with ultraviolet rays, can manifest the phenomenon of food moths at high temperatures.
