Aubergines in oil

Natural Aubergines in oil (in conversion to organic farming) without citric acid.

Ingredients: sliced aubergines, salt, vinegar, extra virgin olive oil, garlic and mint.

Our aubergines are in conversion to organic farming and are grown in Brindisi area, close to Torre Guaceto Reserve, in the heart of Puglia.

The secret of our aubergines in olive oil is to be processed like the local tradition handed down from generation to generation, that is, soon after their collection, they are hand processed with salt and vinegar, and preserved in extra virgin olive oil.

The aubergine with its unique taste, is among the most popular dishes all over Italy and in foreign countries as well.

Our recipe keeps the Apulian ancient traditions, at the time when the preserves were the way in which our ancestors were used to walk in step with the rhythms of nature, in full compliance with seasons.

Once the jar is opened, keep the inside edge always clean and coat with oil after each use, keep it away from heat sources and protected from sunlight.
