Our aubergines are in conversion to organic farming and are grown in Brindisi area, close to Torre Guaceto Reserve, in the heart of Puglia.
The secret of our aubergines in olive oil is to be processed like the local tradition handed down from generation to generation, that is, soon after their collection, they are hand processed with salt and vinegar, and preserved in extra virgin olive oil.

Our recipe keeps the Apulian ancient traditions, at the time when the preserves were the way in which our ancestors were used to walk in step with the rhythms of nature, in full compliance with seasons.
